Highlights: Rice

Different types of rice are used to different effect in Indian cooking. The most famous is the aromatic long-grained Basmati rice, used to add an extra subtle flavour to biryanis and other preparations. Try the Saffron or Jeera rice as a side for your curry dish; for something special, order one of the biryani rice dishes and enjoy the subtle taste. Biryani dishes are cooked risotto-style, with the spices and other ingredients added to the pot as the rice is boiling.
